Ingredients
- 1 teaspoon olive oil
- 1/4 cup onion
- 3/4 cup basmati rice
- 1-1/2 cups water
- 2 teaspoons butter
- 1 lime
Preparation
- Heat the olive oil in a large sauce pan over medium heat. Chop onion and add to the pan. Cook until tender, about 2-3 minutes.
- Add rice and cook and stir for 30 seconds to 1 minute.
- Add water to the rice and bring to a boil. Once boiling, turn heat down to low, cover and simmer for 20 minutes.
- Remove the pan of rice from the heat. Stir in the butter. Zest the lime and stir the zest into the rice. The zest should be about 2 teaspoons.
Helpful hints
- If you are looking for more of a lime flavor, the lime can be cut in half and squeezed over the rice.
- Look for unenriched rice.
